Smoked duck gumbo

I'm no expert on Louisiana cooking but this gumob came out pretty well...

A combination of smoked duck, home-made andouille and shrimp.

Just a prelude for New Year's Eve.

Not really a duck eater, but I have to try this if it were served up.   Nice looking gumbo!

Looks really good.. home made andouille is one of my favorite sausages. I have not tried to make it yet.

Patrick... If you do it, make a lot. It's some effort to get the grinder, casings, etc. ready so you might as well make a batch of it.

Frozen it will keep for a year.

Excellent looking bowl of gumbo! I really like the addition of the smoked duck too.

I don't see any okra. Did you use a filé powder in it?
