Stuffed sweet peppers
« Reply #-1 on: January 11, 2013, 12:46:39 PM »
Wife has me on some cleanse thing.  Missing my food.  No sugar salt or anything good  Figured she would come home and cook dinner.  Nope. off to Zumba.  She defrosted some chicken and said figure it out. Chicken on the mak.  Cleaned out some peppers.. When chicken chicken is done stuff and back on the mak  Running out of time so just the finished plate. Sweet patato baked fries and some green sticks.  Very good for being a bit healthier for me. I would make that again.

Looks really good...tell us what you mixed with the chicken to stuff the peppers, an was there any seasoning involved?

Put some cumin, garlic powder, pepper on the chicken then smoker.  Black Beans, corn, quinoa, tomato sauce, and a little more ,  garlic powder, pepper.  Shred chicken, combine, and stuff.

Some cheese and bacon and oh ya.  Still turned out pretty good.

Looks good!

I had a choice recently to change my diet or exercise. I chose the exercise. I ran 6 miles this morning in 64 minutes and burned over 900 calories. In 2 months I have dropped 17 lbs since I started running again while still eating the same ;)

2 months ago I struggled to complete 2 miles & was so out of shape and now I can do 6 miles straight no problem. Going to run a half marathon soon!

My hope is that if I keep this up I will not need to adjust my diet because I love food way too much.
