I gotta ask? What did you do with the foil? I have never used foil when smoking my ribs? granted i prefer my ribs dry rubbed only. Although the other half hinted about trying a rack with some sauce.....
The foil will create more tender ribs. The longer you foil them the more tender. The trick is to apply the right amount of foil time. Too much and you will end up with mushy ribs. I like my ribs tender but firm. The meat is firm but still pulls away from the bone leaving a clean bone. That is my idea of a perfect rib. Your idea might be different. Best thing to do is to experiment and find what works for you so that you end up with a consistent product you like. That is most important.
You can also create some foil love. Just add some butter, honey, and brown sugar to the foil ribs. This will flavor the ribs and create a sauce that you can drizzle back onto the ribs. Ummm ummm!
