This was a chance to use my new injector from Spitjack ( thanks muebe for the heads up! :) ) and to spatchcock a chicken ( I still wince from the painful sound of that descriptive term ::) ) and cook it on the MAK 2 Star General. I call it "Roadkill" because it looks like it should have tiretracks on it, being flattened... ;D
Here we go-
Really nice padded cordura kit.

This is the most complete package on their site with four different size needles - and a cleaning brush. This thing is built like a TANK!

Yeah...I know it says "STEAK SAVOR" - but it works so well in poultry too!

So...we use a knife to cutdown to bone - all along the keel, then use poultry shears to cut thru the bone

Then blend 1/4 cup Steak Savor, 1/2 cup water and 1/2 cup olive oil in blender to homogenize ( only used about half of it )

Draw it into the syringe/injector

Inject the legs/thighs

Now - the breasts - note the entry point under the "shoulder" joint of wing. Small amounts, then change angle

A little olive oil, then rub it around so the Steak Savor that we are going to dust onto the chicken can stick to it.

Dust it on...

Use enough - and tuck those wing tips! Add a little salt an pepper while you are at it....

Placed the Amazen Tube with a mix of 100% Cherry and 100% Pecan...set MAK to 300F - cooked for 1hr.45 min....AND:



Bottom line: I can't believe how good this was. Absolutely - without  doubt the best chicken I have ever cooked. Has a really "chickeny" flavor, with mild, but supportive  savory herbal flavors. A real wood fired - open roasted flavor! Perfect skin, and meat so juicy it would squirt at you!

At some point I got oil on the lens of the phone/camera ::)...So sorry the pics were pretty blurry. But the chicken was amazingly good.

The Spitjack is truly a "buy once" device. It is extremely heavy duty built, and I can't imagined EVER needing to replace it. But - you can break it down to the smallest component for cleaning - and I expect that you can get replacement parts from Spitjack.
Not a cheap device  - and not cheaply made, but a reasonable price for a high quality, permanent solution.

Thanks Pappy....I kinda like doing things with food that make a dish a little different sometimes. And - Any chance to do cardio-thoracic surgery on a chicken is always fun ;D

Great looking bird T! Love that injector too. Would work real well on a whole pig and picnics roasts I bet.  Where did you pick it up?
