Mo' Rockin' Smoked Yard Bird

The local supermarket had chicken on sale this week @ $0.99/ pound and the bride wanted chicken salad for lunch next week so I picked up a roaster.

Spatchcocked the yard bid and slathered it with mayonnaise; liberally coated it with Mo' Rockin' Chicken rub (if you haven't tried it, you need to!). Fired up the Yoder with sugar maple and cooked the yard bird at 350 degrees F. for about 90 minutes. Also smoked a couple of yams at the same time.

I was pleased... the chicken was moist and the skin pretty crispy. (But I should have made a rosemary cream sauce!)

WOW! Nice color on the bird... I see a lot of people using Mo' Rockin' on chicken. I need to get some and try it out. Good Job:)

Just got a bottle in the mail.  I'm going to use your approach, pretty much, but will substitute ICBINB spray for the mayo.  Lookin forward to some great chicken  ;D

Don't see any benefit to putting it under the skin but it prolly wouldn't hurt.
