Chicken thighs and lollipops

Today I cooked some chicken legs, separated into deboned thighs and lollipops. I used mayonnaise to adhere the rub this time.

Cooking time was 2.5 hours on the kamado with some cherry wood smoke at 250°F (and short time at 280°F). At the end I glazed the chicken with maple sirup. Plated with white and green asparagus salad.

I like doing lollipops.  One way I do them is take a piece of bacon and season  one side with black pepper, salt, and brown sugar.  I then coat the chicken leg with a rub and then wrap the bacon, seasoned side next to chicken, around the leg and secure with a toothpick.  Mop with a sweet BBQ sauce the last few minutes of grilling or in the SRG.   l like the maple syrup idea.

Skin on.

Souns good, thank you. Another cool idea is to place the lollipop inside an holed half of an apple.

I will sometimes drizzle honey on chicken, great idea on the syrup and just beautiful looking chicken WC.
