Burnt ends are pieces of beef brisket (usually from the point/deckle and sometimes from the ends of the flat) which (after the brisket is done) are chopped (in roughly one inch squares), re-seasoned, sauced if you like, and re-smoked.Great stuff.
I love burnt ends but I'm conflicted - the point also makes the best chili ever.
