Smoked Sriracha Chicken Wings

Here's an easy recipe for some Sriracha Wings; this is an amped up version of my standard chicken rub as follows for a bit more heat:

5 Tbsp Smoked Paprika
2 Tbsp White Pepper
2 Tbsp Lawry's Seasoning Salt
2 Tbsp Light Brown Sugar
2 Tbsp Honey Powder
1 Tbsp Ancho Chili Powder
1 Tbsp Garlic Powder
1 Tbsp Onion Powder
1 Tbsp Cayenne Pepper

Slather with a bit of olive oil (or for a real boost, use some reserved rendered bacon fat) and the rub posted above, put in a Rubbermaid tub and refrigerated 12 hours.  When removed, liberally drizzle the wings with Sriracha and placed in a cold smoker loaded with 4 oz. of apple wood at 250 for 3.25 hours (juices should be running clear).

Mouth-burning goodness.

I definitely don't like hot stuff Don and I really like Siracha a lot. Its a semi-sweet mild hot sauce with it own distinct flavor. Great looking Chicken!!

Don, Sriracha is less than 1/3 the intensity of jalapeno on the Scoville scale; I think you could tolerate it and it definitely is more about flavor than heat.  That being said, if you want to give this a wirl just cut the cayenne in the rub back from 1 tbsp to 1 tsp and you'll be fine.
