Oven-Fried (By Necessity) Lemon Pepper Wings

Well, these were going to be smoked lemon pepper wings but there was some ... unpleasantness.  Let's just say that a mockingbird is apparently guarding my smoker and grill with its life and drew blood on the third pass and I'm not in the mood to go all Harper Lee tonight.  You win this round, Mr. Bird.

So, the best laid plans of mice and Joe oft go astray ... thus, we have oven-fried lemon pepper wings on the menu tonight.  The wings were briefly soaked in lightly-sweetened lemonade (75 minutes, more or less), blotted and then rubbed with lemon pepper and a little sea salt.  They went into a 2:1 mix of AP flour and corn starch with quite a bit of garlic powder, lemon pepper, lemon zest, and some onion powder; they were tossed in a Ziploc bag to thoroughly coat and put on a parchment-lined cookie sheet flapper-side down. 

Into the a preheated 400 oven for 30 minutes, then flipped for 10, then pulled and coated with a quick lemon pepper & honey wing sauce for another 10, then flipped again with another coating for the last ten.  Cooked pics will follow ...

... and perhaps pics of the terroristic mockingbird.  As the Dude says: "This aggression will not stand, man!".

LEMON PEPPER WING SAUCE
1/4 cup salted butter
1/4 cup lemon juice
1/4 cup chicken stock
1 tbsp garlic powder
1 tbsp lemon pepper
1 tbsp honey
1/2 teaspoon corn starch
1/2 teaspoon sea salt

Bring butter, lemon juice and chicken stock to a simmer, add remaining ingredients and reduce by 25% or so.  Drizzle over wings during the cook to let the sauce set.

Here are the wings and sauce at the "turn" ... I forgot to add that I made a slurry of the chicken stock and corn starch.  And there may be a heavy dollop of Sriracha in there as well ...

Annnnnnd ... Fini!

I'll be doing these on the grill next weekend, assuming the "parrot is no more" with a longer marinade and a deletion of the flour/CS dusting.  Other than that, I'm pleased, though the sauce needs a healthy dose of lemon zest in addition to the juice.

Nice looking wings.  I'd have went out there in armor if I had to and seen how brave the bird was AFTER the fire was lit.
