Well, these were going to be smoked lemon pepper wings but there was some ... unpleasantness. Let's just say that a mockingbird is apparently guarding my smoker and grill with its life and drew blood on the third pass and I'm not in the mood to go all Harper Lee tonight. You win this round, Mr. Bird.
So, the best laid plans of mice and Joe oft go astray ... thus, we have oven-fried lemon pepper wings on the menu tonight. The wings were briefly soaked in lightly-sweetened lemonade (75 minutes, more or less), blotted and then rubbed with lemon pepper and a little sea salt. They went into a 2:1 mix of AP flour and corn starch with quite a bit of garlic powder, lemon pepper, lemon zest, and some onion powder; they were tossed in a Ziploc bag to thoroughly coat and put on a parchment-lined cookie sheet flapper-side down.
Into the a preheated 400 oven for 30 minutes, then flipped for 10, then pulled and coated with a quick lemon pepper & honey wing sauce for another 10, then flipped again with another coating for the last ten. Cooked pics will follow ...

LEMON PEPPER WING SAUCE
1/4 cup salted butter
1/4 cup lemon juice
1/4 cup chicken stock
1 tbsp garlic powder
1 tbsp lemon pepper
1 tbsp honey
1/2 teaspoon corn starch
1/2 teaspoon sea salt
Bring butter, lemon juice and chicken stock to a simmer, add remaining ingredients and reduce by 25% or so. Drizzle over wings during the cook to let the sauce set.
