I have six Costco rib eyes that I cold smoked with Jim Beam Oak in my OBS in the deep freeze. The two I pulled out for dinner were coated with gunpowder before vacuum sealing and freezing. I find that they take on a much mellower smoke flavor after a few weeks...even if frozen. The rib-eyes were fantastic! Served with scalloped potatoes and croissants. And the rib-eyes were topped with balsamic vinegar mushrooms and melted blu cheese crumbles ;D

If you have not cold smoked your steaks yet you really need to try it ;)

Thanks Muebe..now I gotta do it...the weather is below freezing so it should work out well. How long to smoke frozen please? Or would I be better off with fresh? how long for the fresh too?
