We visited my daughter and SIL in New Hampshire for Thanksgiving... dinner for 14 people...




TDay menu and prep board




Turkey done two ways... a fresh killed farm-raised bird (left) was roasted
and a store bought bird was deep fried. Both were about 14 pounds and brined for 14 hours
before cooking




Everything done and on the buffet for service

Asparagus was wrapped with prosciutto. Asparagus was par boiled for about three minutes and then wrapped and under the broiler for a couple of minutes to crisp up the prosciutto.

My bride is always amazed when everything comes together at the same time. I'm trying to teach her timing but it doesn't seem to be working.

The fresh killed turkey cooked a lot faster than I predicted so it got foiled and toweled... held that way for two hours and it was still warm.

It was very cold (20 degrees F.) and windy outside and we had to build a wind screen for the deep fryer but it all worked out very well.

Did a lot of blanching veggies before the final prep.

After all these years of doing TDay meals I've learned it takes as much effort to cook for two as it does for 200! It's just more prep.

Nice looking meal..timing is everything too. I had a grandaughter finally realize this year as this is her 1st thanksgiving. It's an eye opener. And yes, you still do all the work for 2, just more of it for 200. It's called multi-tasking.  Pam  .☆´¯`•.¸¸. ི♥ྀ

Pam... or having a bunch of prep cooks to do it for you <lol>.

Unfortunately I was the prep cook (with some help from daughter and SIL) and the chef... it got a little hectic especially since my daughter didn't have the equipment I'm used to working with in the restaurant or at home... I'm gonna have to do some serious Christmas shopping for her!

Knives, serving platters, serving spoons, serving bowls, whisks, measuring cups, etc.

But it was still a fun time... second time I cooked TDay at her house. I brought a lot of stuff up with me (hotel pans, casserole dishes, turkey platter, side towels, ThermaPen, ChefAlarm, etc.) but didn't bring my knife roll this time (my bad).

A good dad/chef would see to it that she has that kind of stuff...lol. for your sake..I buy double of everything ..for home and the camground. I leasrned this with my thermapen..it was always at the other place..geez..so I finally broke down and got one for each home. I won one in August from facebook & thermapen. Giving it to my best friend for xmas. Pam   .☆´¯`•.¸¸. ི♥ྀ
