Simple Smoked Chicken

My son, his wife and my granddaughter drove up from Florida today.  We are going to celebrate Christmas
with them tomorrow since he has to be back to work on Monday.  So tonight my son requested smoked
chicken.  We picked up some thighs and legs and they were marinated for about 2 hours in Zesty Italian
Dressing.  I pulled them out of the marinade and seasoned them with some Mo Rockin.  I thought I was
out but then I remembered my stash from The Gathering.

Put onto the Grid Iron using Cookin Pellets Perfect Mix and an initial temp of 175 for the first hour.

After the first hour I bumped the temp up to 250.  I stayed at 250 for about another hour then bumped
up the temperature to 350 for the last 30 minutes of cooking.  Here they are at temp and getting
ready to pull off the Grid Iron. 

These are ready to go into the house and be eaten after a short rest!

Plated with some boxed Rice a Roni and some small corn on the cob.

Really simple but delicious dinner!

We will be having a non-traditional Christmas meal with them tomorrow as they requested ribs.  I
picked up 3 racks of babybacks and they are in the refrigerator, all rubbed down and waiting for
tomorrow.  I will be posting the rib cook tomorrow.  I am using 3 different rubs on the ribs.  One will
have Super Pig; one will be Simply Marvelous Sweet Seduction and the other one Simply Marvelous Cherry.

Talk about another great cook I met at the Fall Gathering - along with Cliff - I mean Mike (aka H O S)!!!

The guy stayed busy the whole weekend and cooked on a Traeger JR and cooked some awesome food.

He has more recipes up his sleeve (and in his head) than Carters has liver pills.  Thanks for sharing, man.

Thanks Pam! No I did this on my large pellet grill, the Blaz'n Grill Works Grid Iron. I am thinking I need to do a review or short
video on the Grid Iron since I believe I am the only one on this board who owns one.
