It's hard to beat smoked Meatloat!!. Took my favorite meatloaf recipe which includes 1 lb of ground beef and 1 lb of pork sausage ... onions, eggs, bell pepper, bread crumbs, tomato sauce, and spices. Smoked at 180ºF for 45 minutes and then bumped the temp to 375ºF until the IT reached 165ºF+. Rested under a foil tent for 20 minutes.
Served with Mashed Cauliflower, brown gravy, and fresh picked daily (20 miles away in the Delta) steamed Asparagus
Local vegie stands are selling fresh Asparagus 40¢ less than Costco right now. The Costco Asparagus are coming from Mexico.
