Looks great but I have only done this with a big 7# chicken without the Slow'nSear. Thinking about it tho.    .☆´¯`•.¸¸. ི♥ྀ.

Don't own a Weber yet but working on it  ;)   When I get one the Slow'n  Sear is on the wish list ;)

Looks really good! Great video.

I like to go with a heavier amount of salt for the surface brine then rinse the bird after the 24 hour run in the fridge.

When you do that though you're adding moisture back to the skin.  We like to let the skin dry out because the fat in the skin renders out better once the skin has dried out.  If you dry the skin out before the cook even starts you render the fat faster and improve the crispiness of the skin.
