Title: Pork Butt on the Weber

I am using the Weber today with the Slow n Sear and the Drip N Griddle.  After trimming a 9 pound pork butt I seasoned it with
Meat Church BBQ Fajita Rub. I wanted a different flavor profile today.

After 9.5 hours. I had to add more fuel at the 8 hour mark as I didn’t fill up the Slow n Sear completely.

It is done after 11 hours.  No foil, spray or mopping this time.

Only pulled enough for dinner as we were hungry.

I forgot to buy buns so we used some garlic Texas Toast.

I wanted a different flavor profile and definitely got it. Very delicious with a Tex-Mex taste. The bark was outstanding! I will be
using this rub again on pork butts.

That butt is a thing of beauty.  Glad to hear you didn't mop, spritz, or foil.  That's the best way to go!

That said, I've found if you foil after the meat hits 180 F you can get done quicker and it still tastes pretty much like it went unwrapped the whole cook.  You'll also have juices in the foil to add back to the meat.

What do you think of the Drip 'N Griddle pan so far?  New product so all feedback is welcome.  8)

Q: I am not going to foil either (Mamma like da bark), what temp did you pull? Losing my mind ??? but is it not 205F ::)

I love the Drip n Griddle!  It sure makes clean up easier and I don't have to worry about all the grease build up on the bottom of my kettle.  Even with foil, the amount of fat that came off this butt would have spread off the foil and everywhere.

Nope, pulled this one at 201. I have taken them to 205 before but that was because it was still not probe tender in spots. I normally start
checking between 198 to 203.

That is some of the best barkage I have seen in awhile

That ark level is pretty common for an unwrapped SnS pork butt cook.  8)
