Smoked a little 3 pound or so pork loin yesterday on my MAK 2 Star using Hickory pellets. Smoked at 200ºF for an hour and then bumped the pit to 350ºF until the IT reached 145ºF. Took about 2 hours. Rested the roast loosely under a foil tent for 15 minutes ... Served with a side of scalloped potatoes and corn. Bon Appétit ...
