Title: Spatch cooked chicken with the Slow and Sear

Had rotisserie chicken on the brain today.   Decided to spatch cook one with the Slow and Sear. 
Found some salt free "Chicken Seasoning" at the supermarket  whick allow me to give it a quick brine.   Then coat with the rub.
Tossed it on the Weber with some lump charcoal and tried to get the temp dialed in between  350 and 375.  Had a tough time getting the temp to stabilize.   Every time i make a slight  adjustment the temp swings up or down.

Temps will settle if you don't fidget with the vents.  A clean burn is more important than an exact temp.  Keep us posted... with pics!

It came out pretty well.  Not a lot of pics.  Was in a hurry.
Ate it on pitas with some hummus

Looks great to me too!  Once you spatchcock a bird or two, it's hard to go back to cooking them any other way.

It was  pretty good, moist and juicy.

The rub wasn't bad.  Years ago I used to use  Webers  "Beer Can Chicken Rub" and it was  really good,  cant find it anymore   :(

Have been on a hunt for a good rub for chicken, suggestions??  ;)

Looks real good...I have the baskets that sit on the side on the Weber and it works for my indirect cooking, specially spatchcoked chickens, not sure I need the slow n sear.. .☆´¯`•.¸¸. ི♥ྀ.

Excellent looking chicken! Check Savor Spices (http://www.savorspices.com/redneck.html) their Mo Rockin is excellent. You can also check Meat Church BBQ (http://www.meatchurch.com/collections/frontpage/products/honey-bbq-pack) their Honey Hog and Deez Nuts Pecan is excellent on chicken too. These rubs are my go to rubs for chicken.
