Title: SnS Lamb Chops

OK, my first run was a NYS and it was fantastic. This time I went for lamb chops following the Adrenaline Barbecue Co posted video. I don’t remember the last time I had lamb. This was so good everyone was looking for more. It was like melted butter.

Trimming them up. This wasn't all that hard just take your time

On the low and slow side. I only used 15 bricks this time and was able to keep the temp under 135 the entire time.

Searing after pulling at an IT of 115 and lighting a ¾ chimney and getting grill hot.

This was outstanding. Again, SnS performs as advertised.

these SamsClub racks are pretty good.

Next time:
- try and find domestic lamb ... it's much better than Australian or NZ lamb
- add just a little lemon juice and a small sprinkle of Greek oregano just before serving
