Title: Slim Jim Time

Got 2 Calif gradnkids coming for a month or so. They asked for some slim jims.

Oh alright but i'm supposed to be retired  :D :D

So how does carrot binder compare to phosphate binders like Ames-Phos or B&P #414?  I've used them with good results before, but never even heard of a carrot binder (but I see them at several sausage supply houses not after doing a google search).  I see on TSM web page that it is listed as an all natural product, so I guess that would be a plus depending on the performance.  This looks interesting....

Not sure yet as this is the 1st time using for me. I try not to use AP much.

CARROT BINDER “C-BIND”   Use as an alternative to soy binder, soy protein & dry milk. This binder is created from carrot fiber. Will hold up to 27 times its weight in water thus retaining moisture & delivering a juicier product.
It does not effect the taste of the product.

It will be interesting to see how they come out and your take on the texture with the c-binder.  Watching this one for sure

1st batch is the carrot binder. Never used it before so will be interesting how it compares to nfpdm and spc.

This batch is the Sans Egal mix. Just done the second mixing by hand.
This gets the flavor all mixed in better, the Fermento is working, Lactic Acid.

You may see fermento in your market in the flour baking section in a small can called Sako Buttermilk powder, Same as fermento.

Get this batch stuffed tomorrow.
