Whole speckled trout which was smoked on indirect heat for approximately 30 minutes and then seared over the hot coals . Served with a lemon butter caper drizzle . Really good ,this trout was bought but I'm planning on going speckled trout fishing when the time is better and trying to put some in the freezer

That trout looks like something you would expect from a HI-$$$ restaurant in NOLA! ;D Beautiful job L.A....

The specks will be messed up for a while after Cindy rolled through. A foot of rain fell yesterday alone over here and I think they got it worse to the west of us.
