Found some nice looking beef short ribs at my local butcher. Believe it or not, it's hard to find beef ribs here in New Mexico, so I jumped on these and took them for a spin...
A little dusting of my fave beef rub, Oak Ridge Black Ops Brisket Rub

Low and slow for a few hours, mesquite pellets, spritzed every hour or so with apple cider vinegar...
