Here's an easy and delicious recipe for leftovers. Lasagne is a big favorite in my family so I decided to throw together a faux Lasagne with leftover Penne Pasta and Marinara Meat Sauce. Sprayed a baking dish with Pam and layered leftover Penne Pasta, Marinara Meat Sauce, Low Fat Ricotta Cheese, and Mexican Blend Shredded Cheese. Repeated the process and into a preheated 350ºF oven for 45 minutes.

My lunch is always leftovers...sometimes no leftovers no lunch...such is the price you pay for eating way too good on the weekend!! 8)

Nice, looks like you have invented a whole new dish, very creative.
My lunch is almost always leftovers. I work at Academy Sports and a lot of the kids there know I go to lunch at 11 so they make a point of sticking their heads in th door of the break room to see what I am eating. They are always disappointed when I go to Publix next door and pick up something. They mostly eat Ramen noodles or some sort of microwave stuff.
I am also the designated cook when we have a company meal. It was kind of flattering last week when we had BBQ and ribs catered and several of them said they had rather I had cooked.
