Title: “Fire-In-The-Hole” Easter Eggs

Now that I have your attention…  I made up some smoked pickled eggs to take to the KOA Gathering, in honor of Lumpy.  I made these once before using his recipe and they were a hit.  I think this batch will be really good.  The pickling juice had a great smell while I was cooking it down.  Here is Lumpy’s recipe.

4 cups white vinegar
1 cup water
½ cup apple cider vinegar
½ cup white sugar
20 jalapenos, sliced
3 large Vidalia onions, sliced
6 garlic cloves
1.5 tbs Kosher salt
4 tbs black pepper corns

2 dozen eggs

Boil eggs and peel
Spread evenly on racks, onions, jalapenos and eggs
Cold smoke for 2 hours (I went three hours this time)with maple or apple wood

Boil liquids, spices, onions and jalapenos
Heat up jars in oven

When liquid is boiling put all ingredients into Mason jar.

Let cool, refrigerate and rotate jars daily.

Onto the picture show.
Two dozen eggs into the pot to be hardboiled.  I had a disaster when I tried to boil the eggs about two weeks ago.  Only one egg peeled properly.  I think the problem was that they were “too fresh”.  I ended up making egg salad for the masses.  That part turned out just fine.

Okay, eggs peeled, onions cut in half, japs topped and cored and into the jap holder and onto the MAK.  I used my tube smoker loaded with apple pellets.  About three hours later they were pulled.

Here is a shot at the two hour mark.  Since I used the tube smoker only to cold smoke everyone, I thought they could use some more time.  The last time I smoked the eggs I didn’t have a tube smoker and I used my MAK set on the Smoke setting.  Those eggs got hot smoked.

A little garlic added to keep the vampires away.

Next was the sliced smoked onions and the rest of the ingredients.

The final product.  Since I only have four jars, I will wait to taste.  I will probably bring two or three to the KOA Gathering.  One may end up at my son’s house.  His wife is going to kill me!

I was just thinking (I know that is dangerous) that I should make some little sausages and pickle them, too.  Pickled eggs, pickled sausages, and of course, some cheap beer.  Brings back some memories from my Navy days.

WTG Art..very nice. How long ya gonna let them set before you try them? Ya gotta try them. Let us know. I made some but added carrots and other stuffs..let them sit about a month. Pam .☆´¯`•.¸¸. ི♥ྀ.

Those do look goood Art, but I think you got the Topic Title correct!!! I would have to cut back on the jalepenos some!!!  Nice photos. Don

Pam,
I think I will "try" to wait until the KOA Gathering to open them.  That is why I made them now.  I wanted plenty of time for them to soak up all the goodness.  Why don't you bring some to the Fall Gathering?  I may have to make some more, but it would be an interesting comparison.  We could take some with us and go watch a football game in town and have a few beers with them.  I'm sure we could find a few others to go, right?

Can I critique those eggs Art?
They do look good. One thing that I do different is that I slice the onions and jalepenos. IMHO, they soak up more smoke and liquid.

OK Art...I just hope we are not in a dry county..and there is a bar somewhere that serves beer & stuff.  I'm getting ready to cold smoke some cheeses for the gathering now. I want it ripe. And I know 2pockets will go for sure..LOL. Oh and more gahhlick too.

The jars are in my refrigerator right now.  I believe in keeping them refrigerated.

Lumpy,
I was running out of time, so I decided to take a short cut.  I ended up having to keep them in the smoke for an extra hour, so maybe I didn't save any time after all.  I could probably have cheated and put some "liquid smoke" in the brew.  No I couldn't!!

Art, Alabama will be playing the Ole Miss Rebels that saturday. I think Dee said there was a good sports bar close to the retreat. I am sure they will have at least one TV tuned to the Alabama game, that will be the only one that would matter.

Back when I tended bar, the bar I worked at did not serve food but we kept a gallon jar of pickled eggs and a gallon jar of pickled pigs feet and bags of pork skins behind the bar. When I would get off work at my real job and come in to tend bar I would have a couple of pickled eggs and open a bag of pork skins and sprinkle Tabasco sauce in it and eat them. I had a stomach made of steel back then.
