Title: Smoked mussels

we love smoked mussels as finger food or appetizer we used to buy it as tinned smoed mussels
i decided to do it my self
i smoked mussels put them  in jar with good oil (canola) not Olive oil
and then in to the fridge for 3 Months

WOW nice job and the pictures look good as well.   Not much on mussels but I think I could try one of those just to see if I could change my mind.  ;)

I would guess that the same would work with any shellfish? I have eaten smoked oysters before and really liked them


What kind of wood do you use to smoke with Ahron?

for sea food i love to use cherry wood or oak

I like smoked oysters, and I like mussels, so I bet I these would be really good.

Do they need to sit in the oil for 3 months or can they be done in less time?

Africanmeat, are you able to get fresh mussels where you are in South Africa?  If you can, I have an awesome smoked mussel recipe.

Why the canola and not olive? Is it for the neutral flavor of the canola? Now that I think about it, olive oil would probably alter the flavor.  :-\

 longer it is in oil the oil will get a better flavor .

you right the olive oil got a strong flavor .
