Title: Beef Pot Pie

What to do with left over... er... reserved pot roast? Well, I had a great cold sandwich for lunch. But, still have about a pound left. Perfect for a pot pie! Ok- I cheated - bought a couple Pillsbury refrigerated pie crusts...  :-[

Made some beef mushroom gravy and added a bag of frozen mixed vegetables and the chopped up reserved pot roast - cooked until the gravy got very thick. Poured the mixture into the bottom crust and put the top crust on it. A few slits and into the oven. After about 15 minutes, I covered the edge with aluminum foil and gave it another 20 minutes in the oven.

Served with some steamed vegetables, mashed potatoes and cold milk... the plates were clean and the kids even ate the mushrooms!

I like it David!  I just wish I had some of that beef pie..... :(     Nice, if Rocky gives the seal of approval....it's good enough for me!

 ;D indeed!  Because we are empty nest-ers, we typically have reserved food that needs a bit of creativity the next day.

Your dinner looks great, and it is wonderful that you have sit down dinners with the kids

I have always loved pot pies, but always forget to reserve chicken or beef to make one.  In fact, I need to try to remember to use some pork for a pot pie one of these days - have never tried that

That looks very good. I'll have to add this to my 'list', not only because it must be tasty, but for the variety it offers. Thanks for the post.

Great looking meal—creative, too.  Nice family photo but your high school-aged daughter is a Broncos fan?  In Brooklyn Park?

Hey Paul,
That's my younger daughter's friend. Still a good question, though...  ::) ::) ;D
I do have to confess, Rocky and I are Packers fans - Emma and Karen are Vikings - I live in a house divided...  ;) 8)
