Went with no pizza pan this time. Much better crust wise. This I will call anything you find in the fridge pizza :)
Need to work on getting that round pizza look but no problem getting it off the peel. Tasted very good for lunch today.
Oh and Tatonka Dust is very good on pizza 8)

Thanks everyone. I'm guessing because it was around the 35 F mark today I should have giving it a bit longer to warm up. I like a crisp crust and the bottom of the oven should have been hotter to give it that crisp bite. After the cook I had a IR heat gun on the bottom of the oven and it read 640 degrees near the back and 450 degrees closer to the front. Mike I wonder if we could mount a temp gauge near the bottom to let us know just how hot we are cooking at?

Try starting with a larger amount of pellets when it is colder out. The bigger base fire is going to give you a lot more heat.
When I first started cooking the pizzas I was using too many pellets in the beginning but it was also warmer outside.
In your kind of temps a larger starting fire might be necessary.
And I am sure some type of temp gauge could be mounted. Maybe in the door would be good?

Who says pizza has to be round? Think outside the box. Can't wait to try my Uuni when I get home, it's waiting for me. Just heat'er up and cook. I'm ready. Yours look great, I love garbage pizzas. Am working on zucchini and cauliflower crusts too. Pam

Great looking pizza... and Tatonka Dust seasoning does make a very flavorful pizza shake!
