Spinach Patties

I got the idea last night to try some veggies patties ,so i came with that . for a Change I wrote it down .
you will need
1 lb of spinach
1 1/2 onion
1 egg
1 cup parmigiano cheese
1 sweet potato
1 tsp salt
1 tsp white pepper .
3 cloves of garlic .
olive oil
chop the spinach in a food processor and then Infusion it in boiling water for 5 minutes . squeeze the water from the spinach and put in a bowl .
chop the potato ,onion , garlic in the food processor and then squeeze the moisture out of them . add it to the bowl .
add the egg the cheese and the spices .
make small balls put them in a tray flatten them slightly and pour olive oil over them .
put it in a preheat oven 430f for 20 minutes or till slightly brown .
serve with sour cream .

It does look interesting, and I actually do like spinach - but.... I want to see Pappy and muebe eat some... :)

Bookmarked..gonna try the spinach, might add some artichokes to them too..you can do this with any veggie, cauliflower and zucchini work real well.  Pam     .☆´¯`•.¸¸. ི♥ྀ.
