Hello,

Found the forum researching the PBC (mine will be delivered this Friday) I'm looking forward to learning all I can about this cooker.

I've been Smoking Meat and making various Charcuterie for a long time. I've recently began Dry Aging my own beef.

Mostly I use a Kamado style cooker, but have had allot of success with a plain old Weber Kettle grill. I also have a small broke down Bradley, that's mostly held together with duct tape.....

I'm glad to be here and look forward to contributing and more importantly learning.

Welcome from North Carolina.  Where in Central Virginia do you live?  I used to live in Northern Virginia before retiring and moving to NC.

I've lived in Culpeper for the last 5 years or so, just purchased a home here. I'm originally from PA, moved to NOVA after serving in the Marine Corps, spent 20 years in NOVA before moving to Culpeper.

Where did you live in NOVA?
