Some of y'all have asked about this grill so I went to visit the people who make 'em.
I am here to tell you that the this grill - along with the competition smokers - are top quality.
The owner is a competition cook. He was very friendly and told me how he sets this grill up for comp cooks. Although the charcoal drawer runs the length of the grill, he loads only half...it is easier to manage. The drawer itself has two layers of expanded metal spot-welded together with support bars underneath - it will never burn out or warp.
I can't tell you more than what they show on their website -
http://www.assassin-smokers.com/charcoal-grills.html It can be used as a direct-heat grill - remove the water pan and cook directly over the coals
Slide the water pan(drawer) and cook over indirect heat.
Close the damper a bit and add wood chunks and you can smoke low and slow.
The guy uses an adapter to attach his Guru to maintain temps.
This grill could replace MOST of all the cookers I have including the beloved offset.
As far as capacity, I can't think of a time when I would ever max this thing out...even for next week's Cookout with Bremer. I'd love to have it sittin' out there in the cook shed, but I have to draw the line somewhere.
Go ahead and search their site and maybe look for some cooks on YouTube (not mine). Just know this...This grill is the REAL DEAL.
