Pulled Pork Mexican Breakfast No Cardiologists Allowed

 No Grilling Today!  :-[  Temp is 9F right now!

Ok, I needed a few extra calories to be out in this cold for a while. So....
I started by frying up 4 slices of salt pork until they were browned and their fat was rendered. The salt pork was drained on paper towels and then diced. Set aside.
A bag of pulled pork was heating in a pan. A small can of Herdez salsa was put into a strainer to lose the liquid.
2 corn tortillas were put onto the griddle with pork fat, flipped, browned a bit then put aside kept warm. 2 more tortillas added to pan, flipped, and 1/4 C cotija cheese topped each tortilla, the 2 tortillas set aside topped off the cheese. These were pulled to keep warm.
Ok now, top each tortilla sandwich with 1/2C pulled pork, half of the warmed up drained Herdez salsa, a fried egg SUNNY-SIDE UP, diced salt pork, and a good squirt of Sriracha Sauce.
