Mid week... I'm tired and wanted a quick and easy nice supper. Scrounged the fridge and found some bacon. Good place to start! Quick search for bacon and pasta I found a bunch for Carbonara pasta. Ok let's do it! I didn't really measure and kinda winged it here.
Started with six egg yolks and a splash of cream and beat it together

Got a pot of chicken stock ready for the pasta to cook in

Sliced some bacon as thin as I could. I think diced panchetta bacon would work better.

Cooked up and diced again after cooking


Chopped some fresh garlic and sautéed in a bit of reserved bacon fat with Italian seasoning


Cooked the pasta till el dente, drained and immediately transferred and tossed with the egg yolks

Mixed the chopped bacon with the garlic and spices

Added to the pasta and tossed together


Played with some parmesan cheese and fresh ground pepper..


That sure satisfied this soul!

I have wanting to make this for quite some time. Pancetta and lots of black pepper seem to be the key players in what I have seen.
