My take on bacon-wrapped chicken...
« Reply #-1 on: May 03, 2016, 07:15:02 PM »
Y'all keep in mind I am just a backyard jack...

I saw the posts where guys were cookin' bacon-wrapped chicken in muffin tins - so I set out to try it.
Instead of muffin cups, I used disposable mini-loaf pans.  I used thighs and regular sliced bacon (a cheap brand) and added some stuff on top.  I used the Weber with the Fire Butler and heat deflector at close to 300* for a little over 2 hours. They turned out.
there should be a pic before they went in, one whilst they were in, one when they came...well, you'll see 'em.
I made each one with different seasonings and toppings...the list shows which toppings.  I numbered the tins to keep track of 'em.

Thanks for the ideas and recipe, folks.

Again, hats off to Don for sharing the details of this recipe.
I like getting hold of "open"  recipes - those that have ingredient options and flexibility.  This is definitely one of them.
B T W, the peas were Deb's idea.
