Friday night, fish night.  Bamabob wanted salmon, BamaPat said I want it crispy.  Well, time to break out the grill grates and the cast iron.
Rubbed with Plowboys Yardbird, coated with Grapeseed Oil.  No sticking problems.
I'm going to be exploring this reverse pan sear more with other cooks.  Nothing like that sizzle sound as the cast iron is carried into the house.

Into the frying pan for a quick sear


Plated with Fennel, Onions, Peppers and Shallots  Crispy crust, flaky interior.  Everyone was happy  ;)

Sometimes you have to go in a circle to reach your destination.

Cause you dont like the contamination risk,or just the fish?

I make a smoked salmon and people who hate salmon love it.I pack it in salt and brown sugar in refer a couple days,then rinse real well and into smoker.My trick is I also dry it,fishy taste and oil gets removed in the drying(and in marinating),its downright as gourmet as a fish dried can be.As different as cats and alligators from plain old smoked salmon.

Had a bad experience with some salmon past its prime. Haven't touched it sense. In fact the only time fish of any kind is cooked in my house is when I am out of town
