Spatchcocked and Smothered In Mayo....

.....and then heavily rubbed with Big Dick's Margarita Rub. The PK got going good and tossed on  a chunk of apple wood. Put the bird on and cinched up the vents a little to get some good smoke and slow things down for a bit. After 30 minutes vents open to crisp up that skin. Plated with Roseanne Cash's potato salad and steamed broccoli with a vinaigrette. A great Labor Day meal!

Looks good to me. My wife would not touch it once she new it was smothered in Mayo.

Lol! It's funny because there is no discernable mayo taste but the thought. My family is Italian. So whrn we gather, there is lots of regional Italian foods. Several have anchovies, if my brother sees it, he won't eat that dish. But unknowingly, he loves the foods that contain anchovies! :D

He may be related to the Mrs. Tee....tho her aversion runs to all things white....Fortunately she made an exemption for me....and my day-glo legs! :D :D :D

Try it. Under and over the skin. Season the mayo. Works great
