Quick gumbo in the pressure cooker

Made smoked chicken, smoked pork, ham and sausage gumbo in the pressure cooker.
Sautéed two medium onions to stock celery one yellow bell pepper and a teaspoon of minced garlic  in the Insta pot with a little bit of oil. Added two smoked chicken leg quarters, and about a third of a pound of leftover smoked pork & 1/2 lb frozen okra.
Cooked on high-pressure for 40 minutes.
Removed the bones and skin from the chicken and broke up the smoked chicken.
added a 1/3rd pound ham diced, three bay leaves, 1 tablespoon Tony's Cajun seasoning.
Mixed premade Roux with warm water and added.
 Added 1 pound sliced smoked sausage and back on the pressure for four minutes.
Served with garlic bread and allow guests to and their own finishing spices which included Tony's Cajun seasonings, Tabasco hot sauce, Louisiana hot sauce, or Panola hot sauce.
Maybe an hour and 20 minutes from start of prep to serving, tasted like it had cooked all day.

Just bought a pressure cooker myself, mine is a stove-top model.  But, it will hold seven quart Mason jars.

When you say "high" pressure, about how many PSI is that?

Me loves gumbo too.

I've had okra in the freezer forever to make it & just haven't gotten around to it.
With the cold weather coming on, It's probably time to get it done.

If its the IP I think high pressure is between 10.2 to 11.6 psi.

Electric pressure cooker high is about 10 psi
Stove top about 15
Will need to shorten cooking time.

Dadgum, I am only few hours away and you did not call. I am on my wife's laptop in the new house, hopefully I can get my computer and printer hooked up tomorrow and I can save this and print it out. Looks Good! How far from Dothan Alabama are you?

Just checkin' cause that sounds like a very long time on high pressure.
