Hickory hot-smoked Bison Lasagna

We've always had lasagna on Christmas Eve, and MIL passed the reigns to me last year.

First, we start with the bible. (Betty Crocker)   ;)



A helluva mess later. 




Overnight in the fridge to get happy.

'Midnight Mass' is at 4PM here, so into a 275* pit it goes at 3:30.



90-ish minutes later.



Let it rest for a while (that Le Creuset pan stays rocket hot for an hour), then slice and plate up with some garlic knots and a salad.

Lasagna was a favorite at our home on Christmas Eve for many years.  I have never tasted this dish with a smoke flavor.  I would bet it was delicious, it sure looks good.
