The other day I had time to cold smoke some little smokies for about 35 mins then I grilled them on the SRG for a later date.......

Well that later date was last night.  Low carb  "Piglets" in almond flour/mozzarella mix  :thumbup:

Mix recipe is 1/2 cup mozzarella cheese (I shred my own)  1 cup almond flour, 1 tsp salt, two packets Pyure steava and 1 Tbs butter.

Roll the mix out till it thin but not to thin, cut into strips then roll the little smokies up til covered.      I used  my air fryer to cook them.  370 temp for 7 mins was perfect

stevia really is great i use it all the time in tea & drinks
I like using Erythritol and Stevia together. Sorta a 1/4 Erythritol (Now brand) to 3/4 Stevia mix.  Help knock out the little bit of bitter taste you get sometimes if you use to much Stevia

Great idea.  The wife scored 2 packages of them on mark down at Kroger.  Now I have an idea what to do with them other than eat them plain.
