Ms Hickory requested Jambalaya so yes I did.  Used Chef Paul Prudhome's original Louisiana recipe w/o oysters.  We can't get good oysters here on the Left Coast.  Cooked in a large CI Dutch oven.

 

With smashed cucumber salad, she said it came out good..... and that is what counts.
