Haven't made the "drive" out of town to get a brisket yet but scored a nice 4 lb Angus chuckie

Time to do a Poor Mans brisket

Oh no. The word brisket was mentioned...………………

I sense an ill wind blowing in from the West.

Could it be?

Yup. Sagebrush Smoochy has arrived!!

and bearing gifts!!!  Nice. Thank you Sagebrush Smoochy!!

I might not live in Texas anymore, but I still roll Central Texas style when I smoke
Used a pellet mix of Pecan, Oak and Mesquite

Went about 4 hours at 225 and then wrapped in peach butcher paper till internal reached 205 degrees

Sliced just like butter.

added some pit beans and time for a good Central Texas supper
Thanks for lookin at Smokes and Smooches cookin

OH MY! I'd eat that! We have a Dickey's BBQ here in Dothan, AL.  I will have to see if they have rubs, love their BBQ.

Yeah, Boy!!!

Now THAT is what BBQ is all about; taking a cheaper, tougher cut of meat and turning into something delectable!

That looks fantastic. What is the deal with the price of Chuck? It was over five bucks a pound at Costco the other day.
