Hay,

I haven't had the time to start round 3 on repairing this old Weber Kettle that a friend gifted me last week.  We needed dinner tonight and figured some well placed foil pieces over the bottom intake holes would suffice.  And suffice it did!  Hooboy, these chops turned out absolutely amazing.  Grilled hard, then slid off to the side.  Mostly lumped hardwood, tossed in a few briquettes to keep the ball rolling just in case I couldn't get enough air in there.  What with not having the bottom vents functional.  Chops were slathered with oil, then Montreal Seasoning, then Papppy's Choice.  Pulled at 138 to 140.

I'd say that broken grill is doing it's job.  Beautiful chops!

And then?  A little sweet potato peach pie we found at a local flea market today for dessert.  I checked out his web site and he only sells at local farmer's markets.  We tried it while there, was enough to blow 20 bux on these little suckers.

Before I make a comment about Pappy's, an aluminum foil comment.  Hay, you're right.  Aluminum foil is our duct tape!  I never thought of it that way, neat.

If I had only one commercial spice rub, Pappy's would be it.  I can't remember how long I've been using it, but I can't be without it now.

I haven't.  The only reason I know about Pappy's is that my local grocery store carries their standard rub and the 50% less salt one.  Sounds like I should find out from Pappy's where I can walk in and buy any of their other rubs.
