Spatchcock chicken is a method of preparing the chicken. You cut the back bone out of the chicken to flatten it. You can search for pictures on it here.(or the Internet). Pig candy is thick sliced bacon with sugar on it.( or Super Pig seasoning) on it. Either brown or white sugar...I also add a sprinkle of cayenne pepper.
While we're on the subject of pig candy....Not to age me
....but does anyone remember Gomer Pyle USMC? I remember watching his show when I was like 9 or 10 and he was cooking for a General and half way thru cooking some bacon he sprinkled sugar on it. That stuck with me over the years and I had done it often. I do believe that was the first " pig candy"!
