Got A Question....

I've got two 5 lb. chuckies with a healthy coating of rub on each sitting in the refrigerator. I want to make pulled beef sandwiches.
At what temp. do I pull them and put in sealed alum. pan with veggies, and at what temp. are they finished?
This will be my first attempt at pulled beef on the pellet grill. And thank you in advance for any and all advice!   ???

I would put them in the pan once they reach 140F to 150F IT.

Then take them to 200F IT. You will know they are done when fork tender.

Thanks buddy!  Is a starting temp of grill about 225F-250F ok?  And then 300F when foiled about right?

I would start at 225F then bump it up to 260F when in the pan.

I do them @ 225F the whole way. I boat them at about 150F.

OK, the two chuckies hit an IT of 140F, I placed them in two pans with chopped onion, red pepper, celery, baby bella mushrooms, carrots, fresh basil, 4 dried ancho chilli peppers soaked in a pint of hot water, then cut up, added the water chillies soaked in after straining, and finally 2 bottles of Leinenkugle's Oktoberfest beer. Sealed all tightly, cranked grill up to 260F, and now the wait. It's hot out today so time for a motorcycle ride, I hate waiting!  I shall return with the final results.....
