Pork Butt and Flanken Style Short Ribs

Had a random Friday off work today, so I started a butt late last night.  Pulled it off the WSM this morning at round 8:30 and put in FTC until lunch.  I had to run to the store, and I noticed a "priced for quick sale" pack of Flanken Style Short Ribs.  What goes better with pork than beef?  Nothing, that's what.  :P  Actually, we had a salad too, but who needs pictures of all that green and red stuff?

The butt was a little bit of a Frankenstein experiment that worked out very well.  Rub was a combination of my pork and beef rubs (I wanted a good cookie from the sugars in my pork rub but was in the mood for a little bit more savory than normal).  The injection was a complete on the fly mix and match... Orange juice, brown sugar, Dr. Pepper, Worcestershire and Frank's Red Hot (I think that is everything).  Turned out really good.  It smelled like a bad hangover cure when I injected last night, so I was worried.  No pronounced notes notes left after cooking though, just a nice flavor enhancer.

The ribs were smoked for about an hour (I still had plenty of heat left when I got back from the store) and then finished on the stove in a cast iron skillet.  My oldest son, who is the#2  beef fanatic of the family (besides me of course) grabbed the 2 largest ones before I could even get a taste and then started humming and mumbling to himself about how good they were.  I couldn't even be mad at him for taking them since he was enjoying them so much.  I know we all revel in others enjoying our food more than we do eating it ourselves.  The ribs were just a liberal coating of S/P/G/O and I used a little bit of what beef tallow I still have in the fridge in the cast iron.  That tallow is definitely the gift that keeps on giving.  I am down to about a cup left.
