Smoked Carmelized Onion and Cheese Enchiladas

Get the onions going

 

Yea they done



Get some flour tortillas warm and wet



Let’s make some enchiladas

Some Monterey Jack, Onions and Jalapenos.



Rolled up tight and let’s cook



On the Mak for 30 minutes of smoke



Kick up the temp to 350 add some cheddar



All done

I'd eat a skillet of the onions all by themselves.  My kids think I am crazy when I throw pealed onions whole in the smoker (in foil) with my meat just so I can eat them like candy.  :D

Sounds like we should a Southwestern Tex-Mex night folks. We could do burritos, enchiladas, guacamole, pico de gallo and huevos rancheros. I wish I knew how to make chili rellanos; they are my favorite.

Another reptilian "do it the easy way" trick:  Caramelize 6-7 pounds of onions at a time in the crockpot with a bit of olive oil (usually takes about 12 hours in mine - YMMV).  Then freeze them in various sized portions.  Then just grab a portion whenever a recipe calls for them - saves at least half an hour over the chopping block and stove every time.
