That's my kind of "simple"  ::)    I feel sorry for anyone who didn't eat at your house last night!

If you haven't already, try those bakers some time without the foil -- do em' just like you did but put 'em on a tray in the oven at 375 for about an hour.  The skin will semi-crisp but the seasonings will stay on.  Emeril Lagasse invented these and my wife and I eat way, way too many of 'em  ;D

Thanks everyone for your kind words. 
Hub, I will have to give the oven way a shot.  Most of the time
when I do these I will do them in a larger pan with the same
seasonings and covered with foil for the first hour.  I then remove them
from the pan to crisp up.  I just know that either way they are real fluffy like
mashed potatoes when done.
