Burnt Ends

I went back to KC again this year for the Royal.  I had hit a bunch of the well known BBQ places with my brother-in-law last year and we were really impressed by the burnt ends we had at Arthur Bryant's.  We'd been talking all this past year about wanting to go back there if we made it to KC this year.  Unfortunately, they weren't quite as good this year.  There was a fair amount of sliced and shredded mixed in with the chunks.  So I got a couple bottles of their rich and spicy sauce and made some of my own when I got home.  Found a really nice 18lb packer at RD that had a good sized point.  Smoked it for 12 hours at 225 till the flat hit 200.  Separated the point at that time, cubed it into a pan, and added the sauce then back on the smoker.  I foiled the flat and let it rest for a couple hours.  The burnt ends were on for another 3 hours at 250.  I messed up and didn't get pics of the flat before it disappeared but it turned out really well.  The burnt ends turned out great and were pretty close to what I was hoping for.

Really nice meat candy there Nick! I love burnt ends. And - Rib Tips done the same way are great too!

Nice!  First time I had burnt ends was in Georgia  at the cookout.  Very good

Yum! That is a pan full of smoky, meaty, beef candy right there!

My game plan: Wait for the burnt ends while others eat the sliced flat. Less room in their tummies = more burnt ends for me!  ;)

Love burnt ends - last time we did them we took the leftovers to work for lunch

If they would just sell the points separately, I would never even deal with the flats ever again.........especially after seeing your burnt end offerings.

I have often wondered what happened to the points that were cut from the trimmed brisket flats I see being sold. My guess is they're ground up for hamburger meat.

I have to admit I have never had burnt ends..  :( They are made from te Brisket point? I seen some points for sale the other day.. gonna go pick some up. Any info on how to make this would be appreciated...
