Latvian Pulled Pork & SauerKraut

My heritage is 100% Latvian ... I immigrated to the USA in 1959  :)  This is a recipe that I've enjoyed since my youth and I guarantee that even if you don't like SauerKraut you'll love this recipe.  The Pork Butt is simply to die for and virtually melts in your mouth.



Ingredients:  4-5 lb trimmed Pork Butt, 1 Gallon SauerKraut, Large yellow Onion, Head of Cabbage, bundle of Celery, Carrots for color

Spices:  4 Bay leaves, 4 tsp crushed garlic, 1 tsp black pepper, 2 tsp Lawry's seasoning salt, 2 tsp Lawry's garlic salt, 28 cups of water, and 15 tsp Knorr Beef Bouillon

Directions:  Using a cullender, rinse the SauerKraut thoroughly with water. Dice onion, celery, carrots & cabbage.  In a large pot, combine all ingredients and spices.  Bring to a boil, and add the pork butt.  Bring back up to a boil, reduce heat, and simmer for 5 to 6 hours.  Stirring occasionally.  Steam some red potatoes and server ... Bon Appetite   8)

OK Pete, I am one of those guys that don't like Sauerkraut but you have convinced me to give it a try sometime soon. Looks very good and thanks for posting it.

Wow....I love sauerkraut.  This looks like a great recipe for a cold weekend cook!  Thanks for sharing.

The key smokedevo is that you "must" rinse the Sauerkraut really good to get rid of a lot of that sour taste that some people don't care for.  The results will really surprise you.  The other key is that you need to simmer it for a long time so that the pork butt can break down and infuse all that flavor into the sauerkraut  ;)

My family is Rumanian and we have a similar dish..it's fabulous and I grew up on it. Grandma made her own sauerkraut and set it outside with dish on top and a brick to hold it down,because of the smell. 5 gallons at a time. Thanks for the memory. Pam
