ok, well I been cooking a butt on the 18 WSM.  temps have been holding right around 240°.  perfect.  winds picked up.  30 - 40 mph for the rest of the day.  now were at 280°.  it's ok because the butts @ 190° and will come off soon.  i'm still hungry.  so I would normally fire up the kettle and get to cooking some jimmy dean.  wind and more wind.  fine, the mak 1 star it is.  it doesn't care what the wind says.  it will cook my jimmy dean at 280° until its done.  I like that.  what smoker / cooker / grill will work pretty good in the wind.  i'm looking at a kamado joe for purchase around the end of January for my own enjoyment.  the wife wants a pellet grill up at the cabin.  rec tec or ys-480 i'm thinking.   still like to cook in the wind.  what say thee...... 8)

Yeah, my WSM never was affected by cold, wind or zombie attack.

I have a Rec Tec, and I love it.  I have not had to deal with any cooks in high winds over 15, so I can't comment, but I will say the Rec Tec is a solid rig, and well worth the money.
I've cooked ribs, butts, chicken, brisket and a 40 lb whole pig, and each cook was perfect.  The Rec Tec temp was always within a few degrees of the set point.
If there is a high wind, this can affect the probe, it will sense a cooling, and add more pellets to the pot. So you may see a temp spike, but the spike never last long, and will not affect cook times.
Your purchase all comes down to your needs, and what you like in a smoker.

I know cold and windy. The Mak 2 star never lets me down. Stay safe my man.. those are some pretty heavy winds.

It's pretty windy here as well in the San Antonio area with the wind chill being about 33 degrees. According to Pappy, this is shorts weather where he lives.

My WSM holds temp really good in the wind too Sparky! But I haven't gotten any temp spikes
or any other problems cooking in my Blaz'n Grill Works Grid Iron. It's like a tank and holds up
great under any weather condition so far.

If you run a Yoder pellet grill in cold weather, it will really eat the pellets.  I would consider Green Mountain Grills as well. They have an outstanding controller and they have 100.00 off their pits right now until Christmas................

Sparky it appears the problem would be the wind pushing more air into the lower air vent increasing pit temps. So any pit without some type of wind shield over the vent will have this happen.

So you need to come up with some kind of wind deflector that goes over the lower vent to prevent the wind from pushing more air into the cooker that at the same time does not restrict the air flow.

And as far as the cold wind sucking the heat away from a cooker this is where insulated pits shine. That cold air traveling over the metal will whisk away heat cooling the pit and using more fuel.

Insulated pits can have a tough time keeping lower temps during the hot summer months however.
