Thanksgiving Menu

Thought it might be fun to post my menu I came up with for 2013, and see what others are making.

Thanksgiving is the one meal I have a written game plan.

Turkey One - Oven (12 pound bird)

Cut into pieces (Julia Child method)
Remove wing tips
Remove back
Brine for 32 hours
Loosen Skin
Oil and Wet Rub under the skin
Inject with a butter/herb mixture
Brush outside with oil/herb mixture

Place in large roasting pan (Meathead’s Recipe)
     Add chicken stock
     Add Carrots
     Add Celery
     Wing pieces, back, fat, and giblets

Use a bradley grate to suspend turkey over pan

Cook at 325 degrees until 160 degrees in middle of breast

Turkey #2 - Mak (12 pound bird)

Spatchcock Turkey
Brine for 32 hours
Inject with oil and herbs
Brush skin with honey/syrup mixture
Smoke for one hour with Milt’s and Tube
Raise temp to 325 degrees until 160 degrees IT
Started
Done


Wild Mushroom and Leek Stuffing

Cranberry - Strawberry Jicama Salad

Broccoli Rabe Bread Pudding cooked under oven bird

Garlic and Parmesan Mashed Yukon Gold Potatoes

Turkey Gravy

Toffee (making Wed night), Turkey salad sandwiches (with whatever leftovers there are) and whatever my wife puts in front of me.  This is her picnic, not mine.
