Butternut Squash, Sweet Potato and Leek Soup
« Reply #-1 on: November 26, 2013, 08:50:20 PM »
The cold weather has certainly altered our tastebuds! Time for soup. I cut up a few leeks, chopped a few cloves of garlic, peeled and chunked a butternut squash and a sweet potato, added chicken broth, cream, bay leaves, fresh thyme, nutmeg, curry powder, allspice, and salt & pepper. This got me thirsty.I then simmered until everything was soft. And pureed using an immersion blender. Bowled it up and served with a bit of freshly grated parmesan cheese.  Very warming and tasty to boot!
